1 1/2 Pound raw Wild Rice 
1 Pound raw Brown Rice
24 Ounce Lacinato Kale (dino)
32 Ounce Seasoned recipe Shiitake Mushroom
16 Ounce Bean Sprouts
16 Ounce Spicy Recipe Sun Flower Seeds
24 Ounce Golden/red work Beets
32 Ounce thai marinated Tofu
16 Tablespoon chiffonade Basil, fresh

Cook Wild Rice according to package.
Cook brown rice. 
Marinade Tofu according to Thai recipe.
Follow Recipes for Shiitake Mushrooms and Spicy Sunflower Seeds
Slice Kale in 1/2 inch thick strips. Wash and spin dry.
Mandolin raw beets and hold in water for use.

Bottom Build:
Wild Rice and Brown rice 2oz each mixed. 4 oz total
Kale 1.5 oz

Top Build starting at 6 o'clock and working clockwise:

Shiitake Mushroom 2oz
Beets .5oz
Bean Sprouts 1 oz
Spicy Sunflower Seeds 1 oz
Thai Tofu 2 oz
beets .5oz
Sprinkle basil chiffonade over all ingredients
Place 2 oz souffle in center of Miso Sesame Dressing in the Center.

Seasoned Shittake Mushrooms (required)
48 Ounce Shiitake Mushroom
2 Ounce Garlic
2 Ounce Shallot
6 Tablespoon Parsley, fresh
2 Tablespoon Thyme, fresh
8 Ounce Olive Oil
6 Tablespoon Salt
4 Teaspoon Black Pepper

Sliced Mushrooms 1/4 thick. Heat Oil in Large Rondo pot. Once to a light simmer add shiitake mushrooms. Season with Salt and Pepper. Cook until tender and water is releasing. Add shallot and garlic and cook for 1-2 minutes. Remove from heat and stir in chopped Thyme and Parsley. Cool on sheet tray.

Thai Beef or Tofu Marinade (required)
1/4 Cup Ginger
1/4 Cup Garlic
1/4 Cup Green Onion
1/4 Cup Brown Sugar
3 Tablespoon Sesame Oil
1 Cup Fresh Lime Juice
1 Cup Soy Sauce
3 Tablespoon Cilantro
2 Tablespoon Sambal
1 Tablespoon Oranges

Score flank steak in cross hatch pattern. Marinate flank steak for 4 hours. Remove from marinade. Grill on medium high for 4-5 minutes per side. Remove at 120 Degrees. 

Cube tofu into 16 cubes. Marinate tofu for 4 hours. Remove from marinade -- keep marinade for baking. 

Put in a baking sheet with about half the remaining marinade. Bake at 325 degrees. Turn every 15 minutes until marinade is absorbed and tofu is beginning to brown. Probably about an hour. 

Spicy Sunflower Seeds (required)
16 Ounce Sun Flower Seeds
2 Tablespoon Salt
2 Tablespoon Chili Powder
1 Tablespoon Cayenne
2 Ounce Canola Oil

Mix all ingredients in a mixing bowl and place on a paper lined sheet tray. Cook at 350 degrees for 5-8 minutes.
