8 Fluid Ounce Soy milk 1 Teaspoon Xantham Gum 1 Fluid Ounce Lemon Juice, fresh 6 Fluid Ounce Canola Oil
1) Mix milk substitute (soy, rice) with xantham gum and freshly squeezed lemon juice. 2) Slowly drizzle canola oil into mixture while blending (emulsification). 3) End result should be a thicker milk substitute reminiscent of heavy cream. note: it is possible to substitute soy milk for rice milk.
