2 Pound Tofu, extra firm
Remove tofu from packages. Transfer into a half hotel pan. Nest a second half hotel pan on top weighted with a number 10 can to press tofu. After 15 minutes, remove from pan. Put tofu on a smoking rack -- you want a piece on each end of the rack. Leave a space in the middle which keeps the tofu from getting a direct smoke hit and getting overpowered by it. Plug in smoker and fill chips. Place tofu in smoker and run until chips are exhausted -- about 20 minutes. Remove from smoker. Properly cool. Put tofu into a 2 quart container and label.
