1/2 Pound rough small chop Bacon 1/4 Pound Small Dice Yellow Onion 1 Tablespoon minced Garlic 1/2 Cup Apple Cider Vinegar 1/2 Cup Brown Sugar 1/4 Cup Maple Syrup 1/2 Cup Coffee, Brewed
Render Bacon in shallow pan until fully cooked, but not crispy. Remove from pan, strain out fat threw a China Cap. Sweat onion and garlic with some of the reserved fat, season with salt and pepper. Add, vinegar, brown sugar, maple syrup and brewed coffee, bring to boil. Return bacon to pot, boil, reduce to a simmer. Simmer 1 hour, taste and adjust seasoning. Puree and cool.
