Ingredients
2 Pound thin sliced - deseeded English Cucumber 
4 Tablespoon Salt
16 Tablespoon Sugar
4 Cup Rice Vinegar

Directions
Cut cucumbers in half lengthwise. using a spoon deseed them. using a Mandolin or cutting by hand slice cucs into 1/8 in slices. Place in a mixing bowl and sprinkle with salt. 
Allow cucumbers and salt to sit for 15 minutes, add sugar and rice vinegar. Marinade for 2 hours before use.
