Ingredients
3 1/2 Pound  Napa Cabbage 
10 Pound Arugula
1 1/2 Pound Red Onion
1 1/2 Pound Dried Cranberries
4 1/2 Pound Chevre

Directions
Build kit in 2 12qt Containers, Mix Arugula, red onion, nappa cabbage together in a mixing bowl and divide between the two containers. 
Sprinkle half of cranberries in each kit. 
Send Chevre Goat Cheese over in container to be divided on site at cafe.

Send with 1.5 Gals of Champayne Viniagrette.
