Ingredients

1 Each bag
2 Quart Eggs
3 Quart Yukon Gold Potato
2 Quart Cheddar
1 Cup Olive Oil

Directions
Render 1 bag of chorizo in rondo or 2 saute pans. Once entirely cooked transfer to 2" hotel and place on cooling rack

Scramble 2 qts of Liquid egg with salt to taste. When finished, tranfer to 2" hotel pan and place on cooling rack.

1/2" dice on yukon gold potatoes. toss with olive oil, salt and pepper to taste. Cook on sprayed full sheet pan 350 for 12-15 minutes or until tender and slightly browning. Once they reach desired doneness, cool completely on cooling rack. 

When all ingredient have cooled, mix together in a large bowl with 2 qts of shedded cheddar cheese and transfer to a large shoe box.
